Coca-Cola Cake |

Cooking and stirring up the frosting... |
- 2 cups granulated sugar
- 2 cups all-purpose flour
- 1 1/2 cups mini marshmallows
- 1/2 cup unsalted butter
- 1/2 cup vegetable oil
- 3 TBSP cocoa powder
- 1 cup Coca-Cola
- 1/2 cup buttermilk
- 1 tsp baking soda
- 2 eggs
- 1 tsp vanilla extract
Frosting Ingredients:
- 1/2 cup unsalted butter
- 3 TBSP cocoa powder
- 6 TBSP Coca-Cola
- 1 pound box (16 oz.) confectioners' sugar
- 1 cup chopped pecans
- Preheat oven to 350 degrees.
- In medium bowl, SIFT together sugar and flour; add marshmallows. Set aside.
- In medium saucepan, over MEDIUM heat, add butter, oil, cocoa, and Coca-Cola.
- Bring to a boil.
- Remove from heat.
- Pour over dry ingredients and blend well.
- Add buttermilk, baking soda, eggs, and vanilla. Mix well.
- Pour into well-greased 9x13 baking pan.
- Bake for 45 minutes.
- Remove from oven and frost immediately.
Frosting:
- In a medium saucepan, over medium heat, combine butter, cocoa, and Coca-Cola.
- Bring to a boil and add sugar.
- Remove from heat.
- Blend well.
- Add vanilla and pecans and stir.
