Look at the center of these cookies! Need I say more!???
1 cup butter, softened (2 sticks)
1 cup creamy peanut butter
1 cup granulated sugar
1 cup brown sugar
1/2 tsp salt
1 TBSP vanilla extract
2 eggs
1 tsp baking soda
3 1/2 cups all-purpose flour
2 (11.5 oz) bags Snickers Miniatures (you need 45-50 pieces)
Instructions:
- In food processor, process together butter, peanut butter, granulated sugar, brown sugar, salt, and vanilla extract until fluffy.
- Scrape bowl down as needed. Add the eggs and baking soda & pulse to combine.
- Transfer to stand mixer, add flour and beat until just incorporated. Do not over mix.
- Wrap dough in wax (or parchment) paper and store in a covered container. Refrigerate for 2 hours or more before baking.
- Preheat oven to 350 degrees. Cover cookie sheets with parchment paper.
- Unwrap 45-50 Snickers bars.
- With a standard cookie scoop, scoop the dough into your hand. Place candy in center and mold (roll around in hands) until candy is completely covered and shaped like a ball. ***Dough will be crumbly, so dip your palms/fingers in a bowl of water to moisten the dough as you roll each one. This will make the dough much easier to work with.
- Place cookies 2 inches apart on cookie sheet. When all cookies are placed, moisten your palm and go cookie by cookie lightly pressing the cookies to make them a little flatter. Make sure all edges are sealed by fixing any cracks.
- Bake 12-14 minutes.
- When cookies come out of the oven, IMMEDIATELY press each cookie (very lightly) with the flat bottom of a glass. The cookie will take shape and also crack around the edges and have such a professional look to them!!! These cookies will be soft & chewy. Enjoy : )
